Mayonaise

I tried making some mayonaise today after a trip to the fridge yielded an empty jar. After a few internet searches and one failed attempt. I managed to make a nice bowlful of beautiful homemade mayonaise! Oh my goodness!!! it is so good and tangy! I don't think I'll buy mayo anymore. The only downside is that it does not keep long in in the fridge. A week tops. So you would have to make it fresh every time you need it, or make a quantity that you know you will go through before the week is up. It's so yummy though! Here is what I did:


I used one egg yolk (provided by our chickens! and taken right from the nest box this morning)
a pinch of salt
a pinch of sugar
a teaspoon of lemon juice
a half a cup of canola oil

put the egg yolk and all other ingredients except the oil in a deep bowl. Using a whisk or an electric hand mixer (I used electric) blend the yolk and salt and lemon juice and sugar on medium until it is thick and sticky. Then SLOWLY.... Slowly.. add the oil in one..... drop.... at.....a.... time... This is the critical part. You have to go really slow with the oil so it mixes and emulsifies nicely. Refrigerate and enjoy!! Mmmmmm

Peter makes it from time to time. He uses an old McCall's recipe. It's great!
